HYDROLYSIS
In the wider sense: the cracking of covalent bonds by the reaction with water. In the narrower sense, with the fat determination: the digestion with hydrochloric acid to deliberate the trapped fat.

KJELDAHL
Danish chemist who discovered a method for the nitrogen determination.

CRUDE FIBRE
Fibre component, which is left after dissolving the acid and water soluble contents.
