Bread, milk, nuts, sweets, meat or vegetarian products - the variety of foods is enormous. They differ in origin, composition and processing. The demands on food analysis to determine nutrients such as proteins and fats or fibers and additives are correspondingly high.
Cereals as a staple food
Cereals provide carbohydrates, fats and proteins - important macronutrients that can be reliably analyzed using suitable methods. The fiber content also plays a central role in grain analysis and can be determined by fiber extraction. The "Arbeitsgemeinschaft Getreideforschung e. V." offers recognized standard methods for this.
Animal products and plant-based alternatives
Milk from cows, goats or sheep is the basis of numerous products such as yogurt, cheese or quark. It contains proteins, calcium and probiotics. The nitrogen and protein content is usually determined using the Kjeldahl or Dumas method. The fat content can be analyzed using hydrolysis and solid-liquid extraction. This also applies to vegan alternatives such as soy or oat drinks. The LFGB and ISO guidelines are decisive.
For meat, fish and meat substitute products, the focus is on protein and fat analysis. Fish fats in particular, including omega-3 fatty acids, are considered valuable. The LFGB and the AOAC provide specifications for analysis.
Sulphur dioxide in food
SO₂ is used as a preservative in wine, dried fruit or juices, but is harmful to health in high quantities. Compliance with international limits can be checked by analyzing sulfur dioxide, for example by steam distillation. AOAC and DIN provide guidance.
